Every time I create a dish, I let the memory of its main ingredient’s flavor guide me. It is a journey that begins with vivid childhood images, the intense aroma of a ripe tomato picked on a summer evening or the deep, rustic taste of roasted chicken from the farm where I grew up.

Those memories are my compass, a thread connecting me to my roots. I strive to treat each ingredient as a story in itself, capable of evoking emotions and delivering authenticity. In my work, every decision—from technique to presentation—results from a delicate balance between memory and innovation, translating the richness of the past into a contemporary vision.

The gastronomic proposal of the Petra Segreta Resort & Spa is transformed by sealing an important collaboration with Chef Enrico Bartolini who will supervise the entire gastronomic offer of the Resort collaborating with the Executive Chef and patron Luigi Bergeretto.
